A single producer coffee: LEGUIZAMO FAMILY HUILA, COLOMBIA

CUPPING NOTES: EFERVESCENTE CITRUS and RASPBERRY

This honey processed coffee is a hybrid washing method where the coffee cherries are de-pulped but dried with out fully washing, leaving a sticky, honey like mucilage on the bean. This process balances the high body/sweetness of natural processing (when the whole cherry is left intact) with the clean, bright acidity of washed coffee.

PROCESS: HONEY

VARIETALS: BOURBON

ROAST: LIGHT

We are happy to partner with A COFFEE COMPANY and the Leguizamo Family to offer this unique coffee from the Huila district. This coffee highlights our goal to partner with family farm producers and roast their crop on our family farm here in New York.

THE BOURBON VARIETAL originated from the Reunion islands previously Bourbon, it is sought after in the specialty coffee industry for its superior cup quality and is adapted well Colombia for it requires high-altitude, nutrient-rich, volcanic soils. Its susceptibility to coffee leaf rust and berry disease requires intensive care, leading to higher prices compared to more disease-resistant varieties. Bourbon is one of two main varietals (the other being Typica) that many new cultivars are bred from.
